This Alsatian lamb mold is ceramic and is used to bake the traditional Easter cake, the Lammele, of the Alsace region.
The lamb symbolizes Christ as the sacrificial lamb and the cake originated in Germany where it is called Osterlamm Kuchen.
The ninth photo shows my Alsatian rabbit mold in the oven, and the last photo shows the completed rabbit. Since it was the first time I'd made this, I encountered a couple of issues. One was opening the oven door to check the progress. This should not be done as the cake collapses owing to the sudden temperature change. My cake collapsed and the edge order was nonexistent so there is no base.
****IMPORTANT**** Because these molds aren't completely sealed, even though there is the metal piece to hold the halves together during baking, it is important to use a flour paste to coat the seam and prevent leakage of batter. Also, the metal piece leaves marks on the ceramic after each use, but these can be washed off with warm water and a sponge.
The base of the mold measures 8.5" and 6.25" at its tallest point (base to top of head).
